Rich, chocolatey and finished with raspberries, this is exactly the sort of recipe we are talking about. Make it in your V-ZUG oven, serve it to friends and try to act like producing a seriously good brownie was no big deal.

Chocolate Raspberry Brownie Recipe

 

Ingredients

100g butter (chopped)
50g brown sugar
175g caster sugar
200g dark chocolate (70%), roughly chopped
2 eggs
100g self raising flour
1tbs cocoa powder
1/2 tsp baking powder
1 tsp vanilla paste
1/2 cup of fresh or frozen (just thawed) raspberries

Method

1. Place the chocolate and butter into a mixing bowl. Place the bowl on the rack in the Combi-Steam.
2. Select Steam. Set the temperature to 50°C. Allow to melt for approx. 10 minutes.
3. Meanwhile grease and line a square baking tin (approx. 20cmx20cm) with baking paper.
4. Remove the chocolate and stir until smooth and glossy. Mix in the eggs and vanilla.
5. Stir in the sugar, flour, baking powder and cocoa to make a batter.
6. Spread the batter into the tin. Gently press the raspberries into the top.
7. Place the tin into the Combair SL/P or Combi-Steam on Level 2. Select BakeOMatic- Muffins/Tray Baked Cake – Medium Browned. Select Start (or set End Time if desired).
8. Remove at the end of the automated cooking time. Set aside to cool in the tin for 15 minutes.
9. Carefully remove from the tin, slice and serve with cream, ice cream or fresh berries as desired.
